This Christmas Eve at my grandma's we did heavy appetisers for dinner. I didn't know what to bring and initially has some trouble figuring what would appeal to Leighton from a spread comprised entirely of cold food.
She likes broccoli and pasta so I made kid kabobs. I cooked green and white tortellini, steamed some broccoli florets and cooled them. I alternated them on kabob skewers and threw in red pepper for color balance.
I set out marinara sauce and ranch for dipping and it was a hit. Kids and adults ate happily. Easy preparation, yummy presentation (I didn't realize until I was finished that the red, white and green made for a lovely holiday theme) and it travels well.
Lei wasn't crazy about the red pepper, so for New Year's I replaced it with strawberry and watermelon. With tortellini as an anchor, you can tweak the rest to suit your family's preferences while serving a balanced meal on a stick.
